Broiled Salmon with a Soy-mustard-etc reduction (recipe below) and Steamed broccoli tossed with rice vinegar and toasted sesame oil. Served with a glass of yummy Amber in the great Beer Mugs
that were recently given to us!
~1/3 c. Soy Sauce
Juice of one orange
Juice of 1/2 a lemon
1/2 t. good stone-ground mustard
~1/4 c. red onion
2 cloves garlic
1 t. grated ginger
Marinate salmon in mixture for as long as you can. While salmon is grilling, put marinade in saucepan and reduce the heck out of it until it's thick and yummy.
Baste the top of the salmon with sauce to get a nice glaze on the top right before the salmon is done. Pour the rest of the sauce over the salmon after it's out of the oven.
