Cold Zucchini Salad

I tore this out of a magazine in July 1998 but i don’t know what magazine it was! It’s a great salad.

1 1/2 lb zucchini (3 medium)
1 medium sweet onion very thinly sliced
1 1/2 tsp coarse salt
1/4 cup cider vinegar
3 T frozen apple juice concentrate
2 T chopped fresh basil
salt and pepper to taste

Place zucchini and onion in a colander set over a bowl. Add salt and toss to coat. Let drain at room temperature for 30 minutes. Rinse veggies and squeeze to remove as much moisture as possible.

Transfer to a medium bowl and add bell pepper, vinegar, applejuice concentrate and basil and toss well. Season with salt and pepper. Serve Immediately.
