So last night we had onion fritters and white bean and ham soup. When I made the soup, I didn’t realize I already had some beans in the fridge. So I made more. Then I had these other ones that needed to be eaten. Plus I had this pan of oil that I’d just used for the fritters so …Since we’re holed up here and the gym is closed, what better time to eat a ton of fried food?!?! I found a recipe online and sort of followed it, but not really (as usual).
2 cups cooked white beans
Soak beans in buttermilk.
Dredge in mixture of:
1/3 c rice flour
1/3 c semolina
1 c AP flour
salt
1T garlic powder
Fry in 1/2? of oil (I used grapeseed) until brown and crispy.
Remove beans and drain them on a paper towel or a cooling rack over a cookie sheet.
Sprinkle with salt and grate lemon zest on top.
Eat too many and feel like you’re going to explode then decide to make a dinner that is over the top healthy to make up for it.
I’m making the shopping I did the other day last as long as possible, so we’ll eat meatless meals every third night or so. I poked around the interwebs and found a dish I read the title of and did my own thing.
Quinoa and Rice with Kale and Egg
Make some rice. I use white rice because brown rice is gross.
Cook some quinoa following package instructions. I used chicken stock instead of water so this didn’t end up being completely vegetarian.
Then:
1 shallot, sliced
1/2? ginger, minced
1 bunch kale, chopped
Saute together.
Bring a pot of water to a boil. Add however may eggs you need (right out of the fridge), boil for 7 minutes. Immediately plunge into ice water. Peel carefully and you have the perfect runny-yolked egg for this or ideally ramen.
Mix together soy sauce, rice vinegar, sesame oil and canola oil. I wish I could tell you amounts but I can’t. Sorry! :)
To plate…or bowl that is:
Equal parts rice and quinoa
Sauteed kale
sliced radish
some kimchi
some avocado
the perfect runny egg
I really liked it and it would make an excellent breakfast too. The family did too although hubby said it was good but *too* healthy. And I had to make 2 more eggs for my 15 year old. Bottomless pit that he is.
Now we can eat more fried and sugary things. YAY!!!
