Inspired by Peach Melba in The Essential Dessert Cookbook:
2 nectarines, halved
2 cups blackberries (preferably fresh and organic)
1 T. powdered sugar 3/4 c. granulated sugar 1 T. Vanilla Paste or 2 T. Vanilla
Whipping cream
Puree blackberries and powdered sugar in a blender and then strain through a chinois to remove the seeds. Set aside momentarily.
Put sugar, vanilla and 1 1/4 c. water over low heat until sugar dissolves (make sure not to burn the sugar!)
After it dissolves, bring the mixture to a boil and put the nectarine halves in the syrup sliced-side down and boil for 4-5 minutes or until they are soft and perfect.
Put the nectarines in a bowl and pour some of the yummy blackberry sauce on top.
Add a dollup of fresh whipped cream (best if you add just a smidgen of powdered sugar and a bit more vanilla than most before whipping :)
Oh, so so so good!
