Nothing in the Fridge? Think again!


Chicken tacos
I thought I had nothing to make for dinner. I knew I had a leftover chicken breast from dinner last night. I dug through rest of the fridge. I found:

  • A half bunch of sad, wilted, barely recognizable cilantro
  • 1/4 of a small red onion
  • a small, sad shallot
  • tortillas
  • salsa
  • I put the cilantro, onion and shallot in the food processor with some olive oil, salt and a dash or two of white wine vinegar. Zapped that into a paste.

    I poured it into the tupperware with the chicken breast I’d cut into cubes and let it sit for about an hour. I warmed it all up in a pan over medium heat.

    Turns out, it was great! Topped it with a little salsa.

    I also had grapefruit, cucumber, pomegranate and beets. I hate beets but if I would have had lime, I would have made a little salsa-like thing out of the other three with maybe a little tabasco?

    I love it when I make dinner out of a mostly empty fridge!!
