Fish Tuesday! @hhfreshfishco rockfish, dredged i Fish Tuesday! 

@hhfreshfishco rockfish, dredged in potato flour and pan fried. Drizzled with @chezpim chili garlic vinegar (Nam Som Prik Tum), and topped with Thai basil, mint and crispy shallots. Fried up some leftover sushi rice for a crunchy side. Added a little of @chezpim chili jam on the side for good measure.

Happy with this one. I still have an insane amount of Thai basil in the garden!
Stopped in at @hhfreshfishco at the harbor (as sho Stopped in at @hhfreshfishco at the harbor (as should you! Support harbor businesses during the bridge closure!!) and I always ask the fishmonger what's the best that day. I rarely go in with a plan.

Today: otoro.

Holy shit. This was heaven. 

Made temaki with minced otoro, green onions and cucumber. 

Seared the other half of the otoro very briefly and served with little dots of yuzu kosho.

The server thought we were joking. Not joking. Ate it all (well, left a few pieces of squash and potato with the halibut, I hit a wall), but it was ALL SO GOOD. Even flipped the table before the 7pm reso coming in after us 🤘

Because of my severe hatred of cheese, olives and peppers,I can't usually do that but the menu accommodated me last night! So much fun.
Inspired by a combination of @richtable and @thean Inspired by a combination of @richtable and @theanchovybar: 

Hubby's homemade shokupan, toasted.  Tomato, olive oil, garlic and salt mushed up and spread on top.

@hhfreshfishco bluefin tuna with onion, cucumber, and parsley from the garden (plus lemon, olive oil and salt), a thin slice of the tuna and cherry tomatoes. 

Drizzled with olive oil and sprinkled with finishing salt.

Buttermilk waffle, pan seared trout, chiffonaded (is that a word?) kale with garlic and cherry tomatoes, watermelon rind chutney, and savory whipped cream with lemon zest and chives. Seasoned with Murray River salt and freshly ground pepper.

Instapot short ribs, they only have to cook for an hour! 

Banchan: sesame spinach and spicy cucumber

Some of my kimchi of course! 

And a great improvised cocktail: 
2oz empress gin 
2T simple syrup 
2T lime juice
Some diced ginger
A handful of mint 

Shake with ice. Strain into a cool tumbler. Garnish with a chili (optional) .

Trout with agrodolce red onion and fennel, pine nuts, lemon zest and chives. Side of baby broccoli. 

Simple and delicious and got rid of the red onion and 1/2 bulb of fennel in the fridge!

Seared big eye tuna from @hhfreshfishco with nanami togarashi.  Japanese greens with watermelon radish, onion, garlic, usukushi, sesame oil and chili flakes. 

Yuzu kosho on the side... And a few @kinkhao pickles we snuck home.

Like sole meuniere but I substituted all the ingre Like sole meuniere but I substituted all the ingredients besides flour and sole 😂 (just like the comments section of every recipe) 

Petrale sole, dredged in flour with garlic powder, paprika, salt and pepper. Pan fried in olive oil. Topped with parsley, basil, garlic and cherry tomatoes quickly sauteed in butter. 

Then to make it pretty, I picked some borage flowers for the top. 🥰
